Cilantro Lime Cole Slaw


Servings: 4-6

Ingredients


DRESSING

  • 1/4 Cup Sour ream or dairy-free sour cream or cream cheese

  • 1 Teaspoon Dijon mustard

  • 1 lime, zest and juice

  • 2 tablespoons cilantro, chopped

  • 1 tablespoon granulated sugar

  • 1 tablespoon garlic salt

  • 1 tablespoon onion powder

  • 1 tablespoon ginger

  • 1 tablespoon apple cider vinegar


SLAW

  • 4 cups sliced cabbage sliced (packaged slice cabbage or coleslaw mix is a convenient option)

  • 1 cup carrots, shredded

  • ¼ cup cilantro, chopped

  • 4 green onions, minced


Preparation Instructions

  1. In a medium mixing bowl, whisk all dressing ingredients together.

  2. Add the slaw ingredients and mix well.

  3. Chill for 30 minutes up to 4 hours prior to serving, mixing periodically.

Note: For those with dietary issues where cabbage is not recommended, zucchini/thin zucchini noodles make a nice substitution.
