Ingredients
DRESSING
1/4 Cup Sour ream or dairy-free sour cream or cream cheese
1 Teaspoon Dijon mustard
1 lime, zest and juice
2 tablespoons cilantro, chopped
1 tablespoon granulated sugar
1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon ginger
1 tablespoon apple cider vinegar
SLAW
4 cups sliced cabbage sliced (packaged slice cabbage or coleslaw mix is a convenient option)
1 cup carrots, shredded
¼ cup cilantro, chopped
4 green onions, minced
Preparation Instructions
In a medium mixing bowl, whisk all dressing ingredients together.
Add the slaw ingredients and mix well.
Chill for 30 minutes up to 4 hours prior to serving, mixing periodically.
Note: For those with dietary issues where cabbage is not recommended, zucchini/thin zucchini noodles make a nice substitution.
